Homemade Pasta Sauce

I never really thought about store bought pasta sauce's and how many grams of sugar were in them until recently. The Traditional Style Prego Sauce has 10g of sugar. My homemade pasta sauce has less than 3g of sugar and it is all natural sugar. 
Homemade Pasta Sauce

Ingredients

2 14.5 ounce cans of fire roasted crushed tomatoes
Olive oil 
1/4 cup of green peppers
1/4 cup of red peppers
1/4 cup of yellow peppers
1/4 cup of orange peppers
1/4 cup eggplant (optional)
1 carrot 
1/4-1/2 cups of yellow onions
2 TBL of minced garlic 
1- 1 1/2 TSP dried leaf oregano 
2 TBL fresh basil 
1 TSP dried basil 
1-2 pinches of red pepper flakes 
Salt and pepper to taste (I say about 1/2 TSP of each) 

First dice up all the peppers (whatever you chose to use) and onions. Cut up carrot and egg plant into about one inch cubes. Once those are diced up add carrots and eggplant to food processor. Pulse until the mixture is at your desired consistency. 

In a 10 inch skillet put enough olive oil just to coat bottom of the pan then add garlic. After a minute or so (you don't want garlic to burn) add pepper and onions. After the mixture cooks for a few add roasted crushed tomatoes, carrots, egg plant, and all the seasonings. Stir together. Add water if needed for desired consistency. Let simmer 20-30 minutes.

"Deconstructed" Sushi Roll
Great for a late night snack. You'll feel like you're "cheating." 

Ingredients

1 English Cucumber
7-8 (or however many you are making) small-medium fully cooked cocktail shrimp
1/2-3/4 cup cream cheese (I used fat free)
1/4 cup quinoa or brown rice

Method

Cook quinoa or rice according to package. Wash cucumbers and then slice to desired thickness. Take each slice of cucumber and coat the skin with cream cheese. After coating with cream cheese, coat with quinoa or brown rice. Lay the cucumbers flat and with a piping bag or spoon put about a 1/2 tablespoon of cream cheese on each cucumber. Then top with a piece of shrimp and ENJOY. 

These suckers are less than 30 calories depending upon the cream cheese used.
